Potato mint produces small tubers similar to Irish potatoes, harvested when the stalks dry. These tubers can be boiled, fried, or baked. They spread easily, so it’s best to grow them in pots or use them as ground cover. Water once or twice weekly if potted, and apply compost once or twice a year.
