Chayote squash (Sechium edule) is a heat- and drought-tolerant plant with fast-growing vines, perfect for covering fences. All parts of the plant—leaves, roots, flowers, and fruits—are edible and used in herbal remedies. Its flowers attract pollinators, enhancing fruit orchards. There are two varieties: the smaller, delicate yellow variety and the larger, hardy green variety, both of which produce vegetables year-round.
