Tender Horseradish Roots
Horseradish roots are used as a spice in meat, sandwiches, salads, and drinks. When mixed with vinegar or mayonnaise, it makes a paste that has a taste like mustard and wasabi. The peppery effects on the nasal and eye mucous membranes more than the taste buds.
Dividing Horseradish Roots
Older horseradish roots can be fibrous, but these roots are the most resilient for planting. Even after a few days, they can be divided to grow multiple plants. New leaves will grow first, followed by deeper, softer roots that will eventually grow through the polybags for harvesting.
Storing Horseradish Seeds
We replanted our horseradish seeds after 8 days in the mild winter weather, and they still grew. With proper storage, the seeds can stay viable for over a month, and the roots will even start sprouting new shoots. The illustrations show the planting and sprouting of horseradish from fibrous roots over a span of two weeks.
