Tamarind pods are becoming desiccated. The dry pods have fragile shells that break upon contact, unlike the fresh ones, whose shells adhere to the pulp. When the semi-dry pods are detached from the tree, they leave some fibres on the stalk. The timing of the harvest depends on the intended use. We gathered a variety of tamarind pods – dry, semi-dry, semi-fresh and fresh – from the tree for consumption and to create sauces, marinades, salad dressings, and juice. The semi-fresh and semi-dry pods are sticky and possess a sweet-sour flavour; their pulp separates from the seed more easily, causing less discomfort when consumed.
Stages of tamarind drying
Tamarind pods undergo a drying process while still on the tree. The degree of dryness significantly impacts the adherence of the tamarind to the seed and pulp, as well as the concentration of its flavour. These differences also influence the resulting colour of the sauces and juices derived from the tamarind. Products derived from dry pods tend to have a brown hue, while those from semi-dry pods are orange. On the other hand, fresh pods yield light green, milder sauces and juices. Our practice involves blending fresh tamarind with semi-fresh, semi-dry and tamarind in different proportions to introduce a dimension of complexity to the flavour profile.
Extending Tamarind Harvest Period
Some pods are still in the tree for harvesting as required; however, they will all be gathered before the onset of the initial rains. These pods can be stored in a fruit basket for several months. Extending their shelf life can be achieved through refrigeration or making tamarind juice ice cubes. Nevertheless, the prevalent power deficit in Lusaka reduces the feasibility of refrigeration. Leaving the pods on the tree is a good alternative.

We will partake of tamarind juice as a warm or cold beverage that alleviates the thirst typically experienced during summer. The presence of magnesium, potassium, iron, phosphorous, and vitamin B further enhances the appeal of this homemade summer drink as a hydrating option.
