A Food for All Seasons

The chayote vine has proven to be a remarkably adaptable food source in our Subtropical Eden. These perennial vines grow luxuriantly, safeguarding their roots, which, when adequately supported, can grow endlessly. The roots delve deep into any available space, providing natural shade for the more delicate plants.

In the dry season, vines produce vegetables with no or very few fruits (squash). However, the vines produce abundant chayote squash. Even one heavy downpour in a month can significantly affect fruit production. The harsh weather causes the squash to turn into seeds, so it is better to harvest them when they are still small enough for consumption.

The green chayote squash is larger and coarser than the yellow variety. The vines are faster-growing and have dense foliage than the yellow variety.
