Water spinach, ong choi or Ipomoea aquatica is Ipomoea aquatica grows well in tropical or subtropical climates. It prefers moist or waterlogged soils rich in organic matter. Plant in a sunny location and harvest within 20–30 days after planting seeds or cuttings. Harvesting occurs before the plants start flowering. Ong Choi may be invasive if grown near water bodies, so consider planting in pots to avoid contaminating water bodies.
