In May, nopales stay lush and productive through cool prewinter weeks. Meanwhile, they send out fresh pads and bright blooms as mornings and evenings turn colder. Even so, they thrive in pots and semi-shaded spots. With weekly watering and composted manure, they reward gardeners with tender young pads several times each week.

In the kitchen, these fresh pads are wonderfully versatile. For example, they suit crisp salads, quick stir-fries, and other homegrown dishes. In addition, the potted plants show the ornamental beauty of nopales. As a result, they add year-round interest and stay unfazed by seasonal change.
