Herb and vegetable drying in October

October is hot and dry in the southern subtropics. The herbs and vegetables grow rapidly and are ready to harvest for natural shade drying. Drying takes approximately two weeks, depending on the wind and the size of the herb bunches or vegetable pieces. We grow lots of common garden herbs in pots throughout the year. #LivingInHarmonyWithNature

The dry summer provides an opportunity to naturally preserve herbs and vegetables, which will remain viable for the next two years, depending on storage conditions.

Giant fennel
Potted giant fennel plant growing to over 4m long. It is pest, frost and drought-resistant. Both the leaves and seeds are harvested for use.
Green sorrel herb/ vegetables
Green sorrel is a deep-rooted, drought- and pest-resistant herb with a pleasant, salty-sour flavour and a soft texture. It is consumed raw in salads or on sandwiches. It may be dried, but it is usually available year-round. However, it may need repotting every 2 years, as it can become pot-bound due to rapid growth.
